Our pizza is the result of a deep research on backing that drove us to realize
an high hydration dough extremely fragrant and digestible thanks to high quality
BIO whole weat PETRA flour from Italian Molino Quaglia.
Special flours containing parts of rice, gaba rice (sprouts rich in amino acids),
malt and barley, grant to our dough a low content of fats and yeast (50 grams every 100 portions).
We also leave the dough to rise at least 48 hours.
Selected ingredients of our area and hand-processed tomatoes turn our Pizza
into an incredible experience, offering our Bahia’s point of view on Italian classics.
Each pizza peel is enogh for a party of 2 and can be divided into 2 flavours as per your choice.
